last week i make ginger gems
Ginger Gems
2 c Flour
1 t Baking Soda
1 c Caster Sugar
2 t Ground Ginger
2 T Golden Syrup
100 g Butter
2 Eggs
1 c Milk
Method:
Sift dry ingredients into a large bowl
Warm Butter and Golden Syrup together in microwave until butter has just melted
Remove and allow to cool slightly
Add eggs and milk. Beat well to combine all wet ingredients
Add liquids to dry ingredients and gently mix. Do NOT over mix.
Grease muffin tin with spray oil
Carefully spoon mixture into prepared muffin tins. Fill about ⅔ full
Bake at 200℃ for 12 - 15 min. These are cooked when a skewer inserted into the centre comes out clean or the centre springs back when pressed
